This is a recipe from my childhood my grandma would make me gizzards all the time we usually ate them with Spanish rice and beans, I always thought it would be good as a taco so that’s what I did. This is delicious nutritious and extremely budget friendly recipe.
Recipe:
Gizzard Tacos
Serves 4 ( Can be scaled to feed lots of people very easily just add more tortillas and gizzards)
2 pounds of gizzards ( I used two packages I can’t remember how much it was)
2 white onion
2 tbsp peppercorns
2 bay leaves
6 tomatillos
2 Roma tomatos
2 serranos
1 jalapeno
6 garlic
2 tbsp salt
2 tbsp pepper
1 tbsp beef bouillon
2 limes
2 bunch of cilantro
Instructions for Gizzards
In a large pot drop in all the gizzards cover in water and drop in the peppercorns, the bay leaves, and half the white onion chopped into large pieces bring to a boil and simmer for about two hours ( at a hour and 45 mins you can check the gizzards and see how soft they are you want them to be really tender)
Drain the gizzards and remove all the onion, bay leaf, and peppercorns
Chop the gizzards roughly and throw into a pan and sauté on till they are a little crispy, that’s it they are done and ready to be put into tortillas covered in salsa and be devoured
Instructions for Salsa
Peel and wash your tomatillos and cut in half
Slice your tomato’s in half
Peel and cut your onions into large chunks
slice the tops off your jalapeno and serrano’s
Heat up a pan and drop all the ingredients with the garlic and saute until browned and soft
Now drop all that into a blender and add the cilantro and squeeze the limes into the blender and blend into smooth
That’s really it you can make large batches of this and feed everybody for really cheap. If whoever you are feeding is complaining about gizzards tell them to shut up and open their mind. Best way to serve this is on tortilla topped with the salsa and diced onions and cilantro, Enjoy.
